⚠️ This PR only bumps the version strings — CI on it will fail until the release is packaged by hand. Follow 'Updating to a new Euro-Office release' in the README: repoint the source revs in pkgs/euro-office-documentserver/{package,x2t}.nix at the new tag's submodule pins, refresh the source hashes and npmDepsHashes, regenerate web-apps-package-lock.json if upstream's lockfile changed, then run the VM tests and tools/parity-check.sh.
